My 4 Can't Live Without Low Carb Cookbooks
Women with PCOS tend to do better on a lower carbohydrate diet.
This is because carbs cause spikes in your blood sugars. Something you want to avoid. I know what you are thinking, but carbs are soooo good and how do I make my favorite dishes if I have to cut the carbs? At first, learning how to balance your meals can be a challenge, but once you get the hang of it, you won’t even miss a beat.
I must admit that I found low-carb to be boring and kind of confusing at first.
Everything tasted the same and was bland (yuck!). I got tired of everything really quick. I mean, how many ways could you prepare chicken breasts? I knew I needed to spice things up (pun intended), so I decided I needed to try out some new recipes.
With the help of these cookbooks, that I personally own and use regularly, I am singing a different tune. I don’t believe you should have to sacrifice flavor and taste for good health. That is why I like these recipes, they are flavorful and tasty (2 of my requirements when I decide if I will be making a recipe again). Another reason I love these cookbooks are because the recipes are easy! I don’t have time to be in the kitchen all night especially with a little one. Ain't nobody got time for that!!!
Without further Adieu here are my 4 favorite low-carb cookbooks.
1. The Complete Low-Carb Cookbook by George Stella. If you have read my other posts you will probably see that I always mention this one. Why? Because it kicks ass! So, if you can only afford one of these cookbooks, this is the one I would get. You won’t be sorry. A couple of my favorite recipes are the roasted rosemary salmon and the marinara and mozzarella meatloaf.
2. The Everything Pre-Diabetes Cookbook by Gretchen Scalpi is another goody. My favorite recipes in this cookbook are the herbed chicken and brown rice dinner and the pork roast with caramelized onions and apples. This cookbook has over 300 recipes. Plenty of variety to choose from!
3. 300 15-Minute Low-Carb Recipes by Dana Carpender. I love how simple these recipes are! Plus they taste amazing. My personal favorites are Blue cheese-scallion “risotto” and almond chicken with gorgonzola cream sauce.
4. Chocolate Covered Katie: Over 80 Delicious Recipes That Are Secretly Good for You by Katie Higgins. This is for all the desserts lovers out there. She has found healthier ways to make some of your favorite treats. A couple of my favorites are her chocolate pixie cookies and the chocolate infinity pie.
